Ingredients
- Pasta (spaghetti or fettuccine) - 200 grams
- Pumpkin (peeled and cubed) - 300 grams
- Garlic (minced) - 3 cloves
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Vegetable broth - 250 ml
- Fresh sage leaves - 6 leaves
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Pumpkin seeds (for garnish) - 2 tablespoons
Steps
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the cubed pumpkin and sage leaves, and cook for about 5 minutes, stirring occasionally, until the pumpkin is slightly softened.
- Pour in the vegetable broth, cover the skillet, and let the mixture simmer for about 10-15 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, use a fork or potato masher to mash it slightly, creating a creamy sauce. If the mixture is too thick, add the reserved pasta water to reach the desired consistency.
- Season with salt, black pepper, and red pepper flakes to taste.
- Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated in the pumpkin sauce.
- Serve warm, garnished with pumpkin seeds.
