Steps

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.

  6. Once the pumpkin is cooked, use a fork or potato masher to mash it slightly, creating a creamy sauce. If the mixture is too thick, add the reserved pasta water to reach the desired consistency.
  7. Season with salt, black pepper, and red pepper flakes to taste.
