Ingredients

  • Fresh corn kernels - 300 grams
  • Coconut milk - 100 ml
  • Cornmeal - 50 grams
  • Brown sugar - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Chopped fresh parsley - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a blender, combine the fresh corn kernels and coconut milk. Blend until smooth.
  3. In a large mixing bowl, combine the cornmeal, brown sugar, baking powder, and salt.
  4. Pour the blended corn mixture into the dry ingredients and stir until well combined.
  5. Add the olive oil, nutritional yeast, and chopped parsley to the mixture, and mix until smooth.
  6. Grease a small baking dish with a little olive oil and pour the mixture into it, spreading it evenly.
  7. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
