- Fresh corn kernels - 300 grams
- Coconut milk - 100 ml
- Cornmeal - 50 grams
- Brown sugar - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Chopped fresh parsley - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a blender, combine the fresh corn kernels and coconut milk. Blend until smooth.
- In a large mixing bowl, combine the cornmeal, brown sugar, baking powder, and salt.
- Pour the blended corn mixture into the dry ingredients and stir until well combined.
- Add the olive oil, nutritional yeast, and chopped parsley to the mixture, and mix until smooth.
- Grease a small baking dish with a little olive oil and pour the mixture into it, spreading it evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
