Ingredients
- Fresh corn kernels - 300 grams
- Cornmeal - 100 grams
- Coconut milk - 150 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Green bell pepper - 1, diced
- Tomato - 1 medium, diced
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Baking powder - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent, about 5 minutes.
- Add the green bell pepper and tomato to the skillet and cook for another 5 minutes until softened. Remove from heat.
- In a blender, combine the fresh corn kernels, coconut milk, and nutritional yeast. Blend until smooth.
- In a large mixing bowl, combine the blended corn mixture, cornmeal, sautéed vegetables, baking powder, salt, black pepper, and chopped cilantro. Mix well until combined.
- Pour the mixture into a greased baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before slicing and serving.
