Ingredients

  • Fresh corn kernels - 300 grams
  • Cornmeal - 100 grams
  • Coconut milk - 150 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Green bell pepper - 1, diced
  • Tomato - 1 medium, diced
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Baking powder - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent, about 5 minutes.
  3. Add the green bell pepper and tomato to the skillet and cook for another 5 minutes until softened. Remove from heat.
  4. In a blender, combine the fresh corn kernels, coconut milk, and nutritional yeast. Blend until smooth.
  5. In a large mixing bowl, combine the blended corn mixture, cornmeal, sautéed vegetables, baking powder, salt, black pepper, and chopped cilantro. Mix well until combined.
  6. Pour the mixture into a greased baking dish and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes before slicing and serving.
