Ingredients

  • Tapioca flour - 150 grams
  • Milk - 100 ml
  • Water - 50 ml
  • Olive oil - 30 ml
  • Salt - 1 teaspoon
  • Egg - 1 large
  • Shredded mozzarella cheese - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh herbs (e.g., parsley or chives) - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the milk, water, olive oil, and salt. Bring to a simmer over medium heat.
  3. Remove the saucepan from heat and gradually add the tapioca flour, stirring until fully incorporated and a dough forms.
  4. Let the mixture cool for a few minutes, then add the egg and mix until smooth.
  5. In a bowl, combine the shredded mozzarella, crumbled feta, and chopped herbs to create the filling.
  6. Grease your hands with a little olive oil and take small portions of the dough, flatten them in your palm, and place a spoonful of the cheese filling in the center.
  7. Carefully fold the dough over the filling and roll it into a ball, ensuring the filling is completely enclosed.
  8. Place the filled balls on the prepared baking sheet and repeat with the remaining dough and filling.
  9. Bake in the preheated oven for 15-20 minutes or until golden and puffed.
  10. Allow to cool slightly before serving warm.
