  • Ground nutmeg - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Coconut oil - 30 grams (melted)
  • Dark chocolate (vegan) - 50 grams (for coating)
  • Chopped nuts (optional) - 20 grams

Steps

  1. Preheat the oven to 180°C (350°F) and grease two small cake molds.
  2. In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground ginger, and ground nutmeg.
  3. In another bowl, whisk together the almond milk, molasses, vanilla extract, and melted coconut oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Divide the batter evenly between the two prepared molds and smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool for 10 minutes before transferring to a wire rack to cool completely.
  8. While the cakes are cooling, melt the dark chocolate in a microwave or double boiler until smooth.
  9. Once the cakes are cool, dip each one into the melted chocolate, ensuring they are fully coated, and place them on a parchment-lined tray.
  10. If desired, sprinkle chopped nuts on top of the chocolate before it sets. Allow the chocolate to harden before serving.
