Steps
- Preheat the oven to 180°C (350°F) and grease two small cake molds.
- In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground ginger, and ground nutmeg.
- In another bowl, whisk together the almond milk, molasses, vanilla extract, and melted coconut oil until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Divide the batter evenly between the two prepared molds and smooth the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for 10 minutes before transferring to a wire rack to cool completely.
- While the cakes are cooling, melt the dark chocolate in a microwave or double boiler until smooth.
- Once the cakes are cool, dip each one into the melted chocolate, ensuring they are fully coated, and place them on a parchment-lined tray.
- If desired, sprinkle chopped nuts on top of the chocolate before it sets. Allow the chocolate to harden before serving.
