  • Whole grain bread - 4 slices

  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Sliced avocado - 1 small
  • Tomato - 1 medium, sliced

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Crack 2 eggs into the skillet, season with salt and black pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  3. While the eggs are cooking, toast the bread slices in a toaster or on a grill until golden brown.
  4. Once the eggs are cooked, remove them from the skillet and repeat with the remaining 2 eggs.
  5. Spread the remaining tablespoon of olive oil on the toasted bread slices.
  6. Top each slice with a cooked egg, a few slices of avocado, and tomato.
