  • Red bell pepper - 50 grams, diced
  • Onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 2 large

Steps

  1. Preheat a skillet over medium heat and add the olive oil.
  2. Add the diced onion and red bell pepper to the skillet, sautéing until they are soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chorizo sausage to the skillet, breaking it apart with a spatula. Cook until browned, about 8-10 minutes.
  5. Season the mixture with salt and black pepper to taste.
  6. While the sausage mixture is cooking, slice the French bread in half lengthwise but do not cut all the way through.
  7. Once the sausage mixture is ready, spoon it generously into the bread halves.
