Ingredients

  • Raw peanuts - 100 grams
  • Honey - 2 tablespoons
  • Coconut sugar - 2 tablespoons
  • Water - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - to taste

Steps

  1. Preheat the oven to 180°C (350°F). Spread the raw peanuts on a baking sheet and toast in the oven for about 10 minutes or until golden, stirring halfway through.
  2. In a medium saucepan, combine honey, coconut sugar, water, and a pinch of salt. Cook over medium heat, stirring until the sugar dissolves.
  3. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 5 minutes until it thickens slightly.
  4. Remove the saucepan from heat and stir in the toasted peanuts and vanilla extract until they are well coated.
  5. Pour the mixture onto a parchment-lined baking dish and spread it out evenly. Let it cool for about 20 minutes until set.
  6. Once cooled, cut into squares or bars and serve.
