- Raw peanuts - 100 grams
- Honey - 2 tablespoons
- Coconut sugar - 2 tablespoons
- Water - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Pinch of salt - to taste
Steps
- Preheat the oven to 180°C (350°F). Spread the raw peanuts on a baking sheet and toast in the oven for about 10 minutes or until golden, stirring halfway through.
- In a medium saucepan, combine honey, coconut sugar, water, and a pinch of salt. Cook over medium heat, stirring until the sugar dissolves.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 5 minutes until it thickens slightly.
- Remove the saucepan from heat and stir in the toasted peanuts and vanilla extract until they are well coated.
- Pour the mixture onto a parchment-lined baking dish and spread it out evenly. Let it cool for about 20 minutes until set.
- Once cooled, cut into squares or bars and serve.
