Ingredients

  • Mandioquinha (sweet potato) - 300 grams
  • All-purpose flour - 100 grams
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Butter - 30 grams
  • Fresh sage leaves - 5 to 6 leaves
  • Parmesan cheese (grated) - 30 grams (optional)

Steps

  1. Peel and chop the mandioquinha into chunks. Boil in salted water for about 15-20 minutes or until fork-tender.
  2. Drain the mandioquinha and mash it until smooth. Allow it to cool slightly.
  3. In a mixing bowl, combine the mashed mandioquinha with the flour, egg, salt, black pepper, and nutmeg. Mix until a soft dough forms.
  4. On a lightly floured surface, divide the dough into four pieces. Roll each piece into a long rope, about 1 cm thick, and cut into 2 cm pieces to form the gnocchi.
  5. Bring a pot of salted water to a boil. Drop the gnocchi into the water and cook until they float to the surface, about 2-3 minutes.
  6. In a separate pan, melt the butter over medium heat. Add the sage leaves and cook until the butter is lightly browned and the sage is crispy.
  7. Using a slotted spoon, transfer the cooked gnocchi to the pan with the sage butter. Toss gently to coat.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
