Ingredients

  • Fresh spinach - 300 grams
  • Ricotta cheese - 100 grams
  • All-purpose flour - 150 grams
  • Egg - 1 large
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Nutmeg - a pinch
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Black pepper - to taste

Steps

  1. Blanch the spinach in boiling water for 2-3 minutes, then drain and cool in ice water. Squeeze out excess water and chop finely.
  2. In a mixing bowl, combine the chopped spinach, ricotta cheese, egg, salt, nutmeg, and half of the flour. Mix until well combined.
  3. Gradually add the remaining flour until a soft dough forms. Be careful not to overwork the dough.
  4. On a floured surface, divide the dough into 4 parts. Roll each part into a long rope about 1 cm thick and cut into 2 cm pieces to form gnocchi.
  5. Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  6. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  7. Add the cherry tomatoes and cook until they soften, about 5 minutes. Season with salt and pepper.
  8. Add the cooked gnocchi to the skillet and toss gently to combine. Cook for another 2-3 minutes until heated through.
  9. Serve hot, garnished with grated Parmesan cheese.
