Ingredients
- Cauliflower - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Parmesan cheese, grated - 30 grams
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil.
- Cut the cauliflower into florets and steam or boil until tender, about 10-12 minutes.
- Drain the cauliflower and let it cool for a few minutes.
- In a large bowl, mash the cauliflower until smooth, then mix in the almond flour, egg, grated Parmesan, garlic powder, salt, and black pepper until well combined.
- Dust a clean surface with a little almond flour and form the mixture into small dumplings (about 2.5 cm in diameter).
- In the boiling water, gently drop the dumplings in batches. Cook until they float to the surface, about 3-4 minutes.
- Remove the dumplings with a slotted spoon and set aside.
- In a skillet, heat olive oil over medium heat and sauté the cooked dumplings for 2-3 minutes until slightly golden.
- Serve hot, garnished with fresh chopped parsley.
