Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Parmesan cheese, grated - 30 grams
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil.
  2. Cut the cauliflower into florets and steam or boil until tender, about 10-12 minutes.
  3. Drain the cauliflower and let it cool for a few minutes.
  4. In a large bowl, mash the cauliflower until smooth, then mix in the almond flour, egg, grated Parmesan, garlic powder, salt, and black pepper until well combined.
  5. Dust a clean surface with a little almond flour and form the mixture into small dumplings (about 2.5 cm in diameter).
  6. In the boiling water, gently drop the dumplings in batches. Cook until they float to the surface, about 3-4 minutes.
  7. Remove the dumplings with a slotted spoon and set aside.
  8. In a skillet, heat olive oil over medium heat and sauté the cooked dumplings for 2-3 minutes until slightly golden.
  9. Serve hot, garnished with fresh chopped parsley.
