Ingredients

  • Sweet potato - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Peel and boil the sweet potato in salted water until tender, about 15 minutes. Drain and let cool slightly.
  2. In a mixing bowl, mash the sweet potato until smooth. Add the almond flour, egg, and salt, mixing until a dough forms.
  3. Dust a clean surface with almond flour and roll the dough into long ropes, then cut into small pieces to form the gnocchi.
  4. Bring a pot of salted water to a boil and gently drop in the gnocchi. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  5. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Stir in the heavy cream and let it simmer for 2 minutes. Add the cooked gnocchi and grated Parmesan cheese, mixing gently until well coated. Season with black pepper.
  7. Serve warm, garnished with fresh basil.
