- Sweet potato - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Peel and boil the sweet potato in salted water until tender, about 15 minutes. Drain and let cool slightly.
- In a mixing bowl, mash the sweet potato until smooth. Add the almond flour, egg, and salt, mixing until a dough forms.
- Dust a clean surface with almond flour and roll the dough into long ropes, then cut into small pieces to form the gnocchi.
- Bring a pot of salted water to a boil and gently drop in the gnocchi. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the heavy cream and let it simmer for 2 minutes. Add the cooked gnocchi and grated Parmesan cheese, mixing gently until well coated. Season with black pepper.
- Serve warm, garnished with fresh basil.
