- Spinach - 100 grams
- Parmesan cheese - 30 grams, grated

Steps
- Boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Peel the sweet potatoes and mash them in a bowl until smooth.
- Add the egg, salt, nutmeg, and gradually mix in the flour until a soft dough forms. Be careful not to overwork the dough.
- Divide the dough into four portions and roll each portion into a long rope about 1.5 cm thick. Cut into 2 cm pieces to form gnocchi.
- Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Gently add the cooked gnocchi to the skillet, tossing to combine with the garlic and spinach. Cook for an additional 2-3 minutes to heat through.
- Serve the gnocchi topped with grated Parmesan cheese and freshly ground black pepper.
