- Potato - 300 grams
- Quinoa flour - 100 grams
- Egg - 1 large
- Parmesan cheese, grated - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh basil - a handful for garnish
Steps
- Boil the potatoes in a pot of salted water until tender, about 20 minutes. Drain and let them cool slightly.
- Peel the potatoes while still warm and mash them in a large bowl until smooth.
- Add quinoa flour, egg, grated Parmesan, salt, and black pepper to the mashed potatoes. Mix until a soft dough forms.
- On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope about 1.5 cm thick.
- Cut the ropes into 2 cm pieces to form the gnocchi. Press each piece gently with a fork to create ridges.
- Bring a pot of salted water to a boil and carefully drop the gnocchi in batches. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
- In a large skillet, heat olive oil over medium heat. Add the cooked gnocchi and sauté for 2-3 minutes until lightly golden.
- Serve immediately, garnished with fresh basil.
