Ingredients

  • Pumpkin (peeled and cubed) - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Nutmeg (freshly grated) - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (optional, for serving) - 20 grams

Steps

  1. Steam the cubed pumpkin for about 15 minutes or until soft. Drain and let it cool slightly.
  2. In a large mixing bowl, mash the steamed pumpkin until smooth.
  3. Add the almond flour, egg, minced garlic, nutmeg, salt, and black pepper to the pumpkin. Mix until a dough forms.
  4. On a floured surface (using almond flour), divide the dough into four portions and roll each portion into a long rope, about 1.5 cm in diameter.
  5. Cut the ropes into 2 cm pieces to form the gnocchi. Press each piece gently with a fork to create ridges.
  6. Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water in batches, cooking for 2-3 minutes or until they float to the surface.
  7. Using a slotted spoon, remove the gnocchi and transfer them to a plate.
  8. In a skillet, heat the olive oil over medium heat. Add the cooked gnocchi and sauté for 3-4 minutes until lightly golden.
  9. Serve warm, garnished with freshly grated Parmesan cheese if desired.
