  • Rolled oats - 100 grams
  • Ripe bananas - 2 medium
  • Almond milk - 150 ml
  • Maple syrup - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Chopped walnuts - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add almond milk, maple syrup, vanilla extract, and a pinch of salt to the mashed bananas and mix well.
  4. In another bowl, combine rolled oats, baking powder, cinnamon, and chopped walnuts.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
