- Rolled oats - 100 grams
- Ripe bananas - 2 medium
- Almond milk - 150 ml
- Maple syrup - 2 tablespoons
- Baking powder - 1 teaspoon
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Chopped walnuts - 30 grams
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Add almond milk, maple syrup, vanilla extract, and a pinch of salt to the mashed bananas and mix well.
- In another bowl, combine rolled oats, baking powder, cinnamon, and chopped walnuts.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
