Ingredients
- Espresso or strong brewed coffee - 100 ml
- Heavy cream - 200 ml
- Cream cheese - 100 g
- Erythritol or another low-carb sweetener - 30 g
- Vanilla extract - 1 tsp
- Gelatin powder - 1 tsp
- Cold water - 2 tbsp
Steps
- Dissolve the gelatin powder in cold water and let it sit for about 5 minutes to bloom.
- In a mixing bowl, combine the cream cheese and erythritol, and beat with an electric mixer until smooth.
- Add the brewed coffee and vanilla extract to the cream cheese mixture, and continue to mix until well combined.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the coffee mixture until fully combined.
- Melt the bloomed gelatin in the microwave for about 10 seconds or until liquid. Let it cool slightly, then fold it into the mousse mixture.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours to set.
