- Heart of palm - 200 grams, sliced
- Coconut milk - 400 ml
- Tomato - 2 medium, diced
- Onion - 1 medium, chopped
- Bell pepper (red) - 1 medium, chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped bell pepper to the skillet. Cook for another 3-4 minutes until softened.
- Stir in the diced tomatoes, cumin, paprika, salt, black pepper, and chili flakes. Cook for about 5 minutes until the tomatoes start to break down.
- Pour in the coconut milk and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally.
- Add the sliced heart of palm to the skillet and simmer for another 5 minutes to heat through.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with additional cilantro if desired.
