  • Heart of palm - 200 grams, sliced
  • Coconut milk - 400 ml
  • Tomato - 2 medium, diced
  • Onion - 1 medium, chopped
  • Bell pepper (red) - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and chopped bell pepper to the skillet. Cook for another 3-4 minutes until softened.
  3. Stir in the diced tomatoes, cumin, paprika, salt, black pepper, and chili flakes. Cook for about 5 minutes until the tomatoes start to break down.
  4. Pour in the coconut milk and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally.
  5. Add the sliced heart of palm to the skillet and simmer for another 5 minutes to heat through.
  6. Remove from heat and stir in the lime juice and chopped cilantro.
  7. Serve hot, garnished with additional cilantro if desired.
