  • Bell pepper - 1 medium, sliced (preferably red or yellow)
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Dendê oil (palm oil) - 1 tablespoon (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add the sliced bell pepper and diced tomatoes to the skillet. Cook for about 5 minutes until the tomatoes soften.
  3. Stir in the shrimp, salt, black pepper, and paprika. Cook until the shrimp turn pink, about 3-4 minutes.
  4. Pour in the coconut milk and bring to a gentle simmer. Allow it to cook for another 5 minutes to blend the flavors.
  5. Add lime juice and chopped cilantro, stirring well. If desired, add dendê oil for a richer flavor.
  6. Serve hot, garnished with additional cilantro and accompanied by rice.
