- Bell pepper - 1 medium, sliced (preferably red or yellow)
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Dendê oil (palm oil) - 1 tablespoon (optional)
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the sliced bell pepper and diced tomatoes to the skillet. Cook for about 5 minutes until the tomatoes soften.
- Stir in the shrimp, salt, black pepper, and paprika. Cook until the shrimp turn pink, about 3-4 minutes.
- Pour in the coconut milk and bring to a gentle simmer. Allow it to cook for another 5 minutes to blend the flavors.
- Add lime juice and chopped cilantro, stirring well. If desired, add dendê oil for a richer flavor.
- Serve hot, garnished with additional cilantro and accompanied by rice.
