Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, and sauté until they are softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomato, salt, black pepper, and red chili flakes (if using). Cook for another 5 minutes until the tomato breaks down.
- Add the sliced plantains to the skillet and gently stir to combine with the vegetables.
- Pour in the coconut milk and lime juice, mixing well. Bring the mixture to a gentle simmer.
- Transfer the mixture to a baking dish, spreading it evenly. Cover with aluminum foil.
