  • Dendê oil (palm oil) - 1 tablespoon (optional for authenticity)

Steps

  1. In a bowl, marinate the fish fillets with lime juice, salt, and black pepper. Let it sit for about 15 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sliced bell pepper to the skillet and cook for another 3-4 minutes until the peppers soften.
  4. Stir in the chopped tomatoes and cook until they begin to break down, about 5 minutes.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer. If using, add the dendê oil for extra flavor.
  6. Carefully add the marinated fish fillets to the skillet, ensuring they are submerged in the sauce. Cover and let cook for 10-12 minutes until the fish is cooked through.
