- Beef tripe - 500 grams
- Carrots - 2 medium, diced
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Bay leaves - 2
- Black peppercorns - 5
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Fresh parsley - 2 tablespoons, chopped
- Water - 1.5 liters
Steps
- Rinse the beef tripe under cold water, then cut it into smaller pieces, about 5 cm each.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced carrots and celery, cooking for another 5 minutes until slightly softened.
- Incorporate the diced tomato, bay leaves, black peppercorns, cumin, and paprika. Stir the mixture for about 2 minutes to release the aromas.
- Add the tripe pieces to the pot and pour in the water. Bring to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 2 to 3 hours, or until the tripe is tender and the flavors meld together. Stir occasionally and add more water if necessary.
- Once cooked, season with salt to taste and stir in the chopped parsley just before serving.
