- Mandioca (cassava) - 500 grams
- Vegetable oil (kosher) - 500 ml (for frying)
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons (for garnish)
Steps
- Peel the mandioca and cut it into 5 cm (2-inch) pieces.
- In a large pot, bring salted water to a boil and add the mandioca pieces. Cook for about 20 minutes, or until tender but not mushy.
- Drain the mandioca and let it cool for a few minutes.
- In a deep frying pan, heat the vegetable oil over medium heat until it reaches 180°C (350°F).
- Carefully add the cooked mandioca pieces to the hot oil in batches, frying them for about 5-7 minutes or until they are golden brown and crispy.
- Remove the fried mandioca with a slotted spoon and place them on paper towels to drain excess oil.
- In a small bowl, mix garlic powder, paprika, salt, and black pepper. Sprinkle this mixture over the hot mandioca.
- Garnish with chopped fresh parsley before serving.
