  • Spaghetti - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili flakes - 1/2 teaspoon
  • Canned tomatoes - 400 grams, crushed
  • Capers - 2 tablespoons, rinsed
  • Black olives - 100 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red chili flakes to the skillet, sautéing for about 1 minute until fragrant.
  4. Stir in the crushed tomatoes, and let the sauce simmer for about 5 minutes, stirring occasionally.
  5. Add the rinsed capers and sliced black olives to the sauce, mixing well, and simmer for another 5 minutes.
  6. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
  7. Add the drained spaghetti to the sauce, tossing to combine, and add reserved pasta water as needed to loosen the sauce.
  8. Season with salt and black pepper to taste, then remove from heat.
  9. Garnish with chopped fresh parsley before serving.
