Ingredients

  • Quinoa pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the quinoa pasta and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet. Cook for about 5 minutes until they begin to soften.
  4. Stir in the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach wilts and the tomatoes soften.
  5. Add the cooked quinoa pasta to the skillet, tossing everything together. Season with salt and black pepper to taste.
  6. Remove from heat and sprinkle the grated Parmesan cheese and chopped basil over the top. Toss again to combine and serve immediately.
