- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
Steps
- Bring a large pot of salted water to a boil. Add the quinoa pasta and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for about 5 minutes until they begin to soften.
- Stir in the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach wilts and the tomatoes soften.
- Add the cooked quinoa pasta to the skillet, tossing everything together. Season with salt and black pepper to taste.
- Remove from heat and sprinkle the grated Parmesan cheese and chopped basil over the top. Toss again to combine and serve immediately.
