- Fish fillets (e.g., tilapia or cod) - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create 'zoodles'. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the fish fillets to the skillet, season with salt and pepper, and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside.
- In the same skillet, add the halved cherry tomatoes and cook for about 5 minutes until they start to soften.
- Return the fish to the skillet, add the zucchini noodles, lemon juice, and chopped basil. Toss gently to combine and cook for an additional 2-3 minutes until the zoodles are slightly tender.
- Serve hot, garnished with grated Parmesan cheese if desired.
