  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create 'zoodles'. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fish fillets to the skillet, season with salt and pepper, and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside.
  4. In the same skillet, add the halved cherry tomatoes and cook for about 5 minutes until they start to soften.
  5. Return the fish to the skillet, add the zucchini noodles, lemon juice, and chopped basil. Toss gently to combine and cook for an additional 2-3 minutes until the zoodles are slightly tender.
  6. Serve hot, garnished with grated Parmesan cheese if desired.
