- Yam - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Spinach - 100 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20 grams, grated (optional)
Steps
- Peel and chop the yam into small chunks, then boil in salted water for about 15 minutes or until tender.
- Drain the yam and mash it in a bowl until smooth. Let it cool slightly.
- Add the almond flour and egg to the mashed yam, mixing until a dough forms. Season with salt and pepper to taste.
- On a floured surface (using almond flour), roll out the dough to about 1 cm thickness and cut into your desired pasta shape.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add fresh spinach and halved cherry tomatoes to the skillet, cooking for another 3-4 minutes until the spinach wilts.
- In a separate pot, bring water to a boil and cook the pasta for 3-4 minutes until they float to the surface.
- Drain the pasta and add it to the skillet with the garlic, spinach, and tomatoes. Toss gently to combine.
- Serve warm, topped with grated Parmesan cheese if desired.
