Ingredients

  • Yam - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated (optional)

Steps

  1. Peel and chop the yam into small chunks, then boil in salted water for about 15 minutes or until tender.
  2. Drain the yam and mash it in a bowl until smooth. Let it cool slightly.
  3. Add the almond flour and egg to the mashed yam, mixing until a dough forms. Season with salt and pepper to taste.
  4. On a floured surface (using almond flour), roll out the dough to about 1 cm thickness and cut into your desired pasta shape.
  5. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  6. Add fresh spinach and halved cherry tomatoes to the skillet, cooking for another 3-4 minutes until the spinach wilts.
  7. In a separate pot, bring water to a boil and cook the pasta for 3-4 minutes until they float to the surface.
  8. Drain the pasta and add it to the skillet with the garlic, spinach, and tomatoes. Toss gently to combine.
  9. Serve warm, topped with grated Parmesan cheese if desired.
