- Bell pepper - 1 small, chopped
- Tomato sauce - 200g
- Parmesan cheese - 50g, grated
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Using a spiralizer or a julienne peeler, create noodles from the zucchini and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant, about 2-3 minutes.
- Add the diced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Stir in the chopped bell pepper and cook for another 3 minutes until slightly softened.
- Pour in the tomato sauce, oregano, salt, and pepper, stirring to combine. Let the mixture simmer for about 5 minutes.
- Add the zucchini noodles to the skillet, tossing gently to coat them in the sauce. Cook for an additional 3-5 minutes until the zucchini is tender but still slightly crisp.
- Serve hot, topped with grated Parmesan cheese and fresh basil.
