- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Parmesan cheese - 30g, grated (optional)
Steps
- In a bowl, mix the black bean flour and water until a smooth dough forms. Let it rest for 10 minutes.
- While the dough rests, heat olive oil in a pan over medium heat. Add minced garlic and diced onion, sauté until translucent.
- Add the diced red bell pepper and chopped tomato to the pan, cooking for another 5 minutes until softened.
- Roll out the rested dough on a floured surface (use more black bean flour) to about 2mm thickness. Cut into your desired pasta shape (e.g., fettuccine).
- Bring a pot of salted water to a boil. Cook the pasta for about 5-7 minutes or until al dente, then drain.
- Add the cooked pasta to the pan with the sautéed vegetables, mixing gently to combine. Season with salt, black pepper, chili powder, and fresh cilantro.
- Serve hot, topped with grated Parmesan cheese if desired.
