  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Tomato - 1 medium, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. In a bowl, mix the black bean flour and water until a smooth dough forms. Let it rest for 10 minutes.
  2. While the dough rests, heat olive oil in a pan over medium heat. Add minced garlic and diced onion, sauté until translucent.
  3. Add the diced red bell pepper and chopped tomato to the pan, cooking for another 5 minutes until softened.
  4. Roll out the rested dough on a floured surface (use more black bean flour) to about 2mm thickness. Cut into your desired pasta shape (e.g., fettuccine).
  5. Bring a pot of salted water to a boil. Cook the pasta for about 5-7 minutes or until al dente, then drain.
  6. Add the cooked pasta to the pan with the sautéed vegetables, mixing gently to combine. Season with salt, black pepper, chili powder, and fresh cilantro.
  7. Serve hot, topped with grated Parmesan cheese if desired.
