  • Sweet potato - 200 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - to taste

Steps

  1. Peel and boil the sweet potato in salted water until tender, about 15 minutes. Drain and let it cool slightly.
  2. In a mixing bowl, mash the boiled sweet potato until smooth.
  3. Add the almond flour, egg, salt, and black pepper to the mashed sweet potato and mix until a dough forms.
  4. On a floured surface (using almond flour), roll out the dough to about 1 cm thickness and cut into strips to form pasta.
  5. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Add the fresh spinach to the skillet and cook until wilted, about 3 minutes.
  7. In a large pot, bring water to a boil and cook the sweet potato pasta for 3-4 minutes until they float to the top.
  8. Drain the pasta and add it to the skillet with spinach and garlic, tossing to combine.
  9. Serve hot, topped with grated Parmesan cheese.
