- Black pepper - to taste
Steps
- Peel and boil the sweet potato in salted water until tender, about 15 minutes. Drain and let it cool slightly.
- In a mixing bowl, mash the boiled sweet potato until smooth.
- Add the almond flour, egg, salt, and black pepper to the mashed sweet potato and mix until a dough forms.
- On a floured surface (using almond flour), roll out the dough to about 1 cm thickness and cut into strips to form pasta.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3 minutes.
- In a large pot, bring water to a boil and cook the sweet potato pasta for 3-4 minutes until they float to the top.
- Drain the pasta and add it to the skillet with spinach and garlic, tossing to combine.
- Serve hot, topped with grated Parmesan cheese.
