Ingredients

  • Zucchini - 2 medium
  • Canned tuna in olive oil - 200 grams
  • Heavy cream - 100 ml
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchinis using a spiralizer or a vegetable peeler to create zucchini noodles.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the canned tuna (drained) to the skillet and cook for 2 minutes, breaking it up with a spatula.
  4. Pour in the heavy cream and stir to combine, letting it simmer for 3-4 minutes until slightly thickened.
  5. Add the zucchini noodles to the skillet, tossing to coat them in the sauce. Cook for an additional 5 minutes until the noodles are tender.
  6. Stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper. Mix well and remove from heat.
  7. Serve immediately, garnished with extra parsley and Parmesan if desired.
