  • Spinach - 100 grams, fresh
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. In a mixing bowl, combine the whole grain rice flour and water to form a smooth dough. Let it rest for 10 minutes.
  2. Roll out the dough on a floured surface to about 2-3 mm thick and cut into desired pasta shapes (fettuccine or tagliatelle).
  3. Bring a large pot of salted water to a boil. Add the freshly made pasta and cook for 5-7 minutes until al dente. Drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  5. Add the halved cherry tomatoes and cook for 3-4 minutes until they soften.
  6. Stir in the fresh spinach, salt, and black pepper, cooking until the spinach wilts, about 2 minutes.
  7. Combine the cooked pasta with the vegetable mixture in the skillet and toss to coat evenly.
  8. Garnish with fresh basil and nutritional yeast (if using) before serving.
