Steps
- Spiralize the zucchinis using a spiralizer or a vegetable peeler to create thin noodle-like shapes.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the spiralized zucchini to the skillet, season with salt and black pepper, and sauté for 5-7 minutes until the zucchini is tender but still slightly firm.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes.
- Remove from heat and mix in the chopped basil. If using, sprinkle the grated Parmesan cheese on top before serving.
