  • Whole wheat pasta - 200 grams
  • Ground beef - 150 grams
  • Chorizo sausage - 50 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Bay leaves - 2
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped
  • Parmesan cheese - for serving, grated

Steps

  1. In a large pot, bring salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
  3. Add the ground beef and chorizo to the skillet. Cook until browned, breaking up the meat with a spoon, about 5-7 minutes.
  4. Stir in the tomato paste, canned diced tomatoes, bay leaves, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low and let the sauce cook for 20 minutes, stirring occasionally.
  5. Once the sauce is ready, remove the bay leaves and adjust seasoning if needed.
  6. Toss the cooked pasta with the ragu sauce until well combined.
  7. Serve hot, garnished with chopped parsley and grated Parmesan cheese.
