  • Fresh arugula - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Parmesan cheese - 30 grams, grated
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften slightly.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  5. Add the drained pasta to the skillet with the garlic and tomatoes, tossing to combine.
  6. Stir in the fresh arugula, lemon juice, and some reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.
  7. Remove from heat and serve immediately, topped with grated Parmesan cheese.
