- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, sliced
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Crushed red pepper flakes - 1/2 teaspoon (optional)
- Fresh cilantro - a handful, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced bell pepper, julienned carrot, and sliced zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
- Pour the soy sauce over the sautéed vegetables and stir to combine. If using, add the crushed red pepper flakes for a kick.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce and heated through.
- Remove from heat, and garnish with chopped green onions, sesame seeds, and fresh cilantro before serving.
