  • Garlic - 3 cloves, minced
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, sliced
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Crushed red pepper flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the sliced bell pepper, julienned carrot, and sliced zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
  4. Pour the soy sauce over the sautéed vegetables and stir to combine. If using, add the crushed red pepper flakes for a kick.
  5. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce and heated through.
  6. Remove from heat, and garnish with chopped green onions, sesame seeds, and fresh cilantro before serving.
