- Pine nuts - 30 grams
- Garlic - 1 clove
- Parmesan cheese, grated - 40 grams
- Olive oil - 60 ml
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the pesto by combining fresh basil leaves, pine nuts, garlic, and Parmesan cheese in a food processor.
- Pulse the mixture until coarsely chopped, then slowly drizzle in the olive oil while processing until smooth. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve about ½ cup of the pasta water and then drain the pasta.
- In a large bowl, combine the drained pasta with the pesto sauce, adding reserved pasta water a little at a time until you achieve the desired consistency.
