  • Plain Greek yogurt - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 small, diced
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes, until they start to soften. Remove from heat.
  4. In a bowl, mix the Greek yogurt, lemon juice, chopped basil, salt, and black pepper until well combined.
  5. Once the pasta is cooked, drain it and return it to the pot. Add the yogurt mixture, sautéed tomatoes, and diced cucumber, stirring gently to combine.
