- Plain Greek yogurt - 100 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 small, diced
- Fresh basil - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes, until they start to soften. Remove from heat.
- In a bowl, mix the Greek yogurt, lemon juice, chopped basil, salt, and black pepper until well combined.
- Once the pasta is cooked, drain it and return it to the pot. Add the yogurt mixture, sautéed tomatoes, and diced cucumber, stirring gently to combine.
