Ingredients

  • Pasta (your choice) - 160 grams
  • Carrots - 2 medium (about 250 grams), peeled and chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish (optional)

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Add the chopped carrots to the pot and stir well. Pour in the vegetable broth and bring to a simmer. Cover and cook for about 15 minutes, or until the carrots are tender.
  4. Once the carrots are cooked, remove the pot from heat. Use an immersion blender to puree the carrot mixture until smooth. If you don’t have an immersion blender, you can carefully transfer the mixture to a regular blender.
  5. Stir in the nutritional yeast, and season with salt and black pepper to taste. Combine the sauce with the cooked pasta, mixing until the pasta is well coated.
  6. Serve hot, garnished with fresh parsley if desired.
