- Pasta (spaghetti or fettuccine) - 200 grams
- Cachaça - 50 ml
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 200 grams, halved
- Red bell pepper - 1 medium, diced
- Onion - 1 medium, chopped
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced red bell pepper to the skillet. Cook for another 2-3 minutes until the peppers start to soften.
- Stir in the halved cherry tomatoes and cook until they begin to break down, about 5 minutes.
- Pour in the cachaça and let it simmer for a couple of minutes to allow the alcohol to evaporate, stirring occasionally.
- Add the cooked pasta to the skillet along with a bit of the reserved pasta water to help combine the ingredients. Toss well to coat the pasta in the sauce.
- Season with salt, black pepper, and red chili flakes if using. Stir in the fresh basil just before serving.
- Serve hot, garnished with additional basil if desired.
