  • Pasta (spaghetti or fettuccine) - 200 grams
  • Cachaça - 50 ml
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Onion - 1 medium, chopped
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet. Cook for another 2-3 minutes until the peppers start to soften.
  4. Stir in the halved cherry tomatoes and cook until they begin to break down, about 5 minutes.
  5. Pour in the cachaça and let it simmer for a couple of minutes to allow the alcohol to evaporate, stirring occasionally.
  6. Add the cooked pasta to the skillet along with a bit of the reserved pasta water to help combine the ingredients. Toss well to coat the pasta in the sauce.
  7. Season with salt, black pepper, and red chili flakes if using. Stir in the fresh basil just before serving.
  8. Serve hot, garnished with additional basil if desired.
