- Fresh basil - 1/4 cup, chopped

- Parmesan cheese (optional) - 30 grams, grated
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, wash and dice the eggplant into small cubes. Sprinkle with salt and let it sit for about 10 minutes to draw out excess moisture.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the diced bell pepper and continue to sauté for another 3-4 minutes until softened.
- Rinse the salted eggplant under cold water and pat dry. Add the eggplant to the skillet and cook for about 5-7 minutes until it begins to soften.
- Stir in the diced tomatoes and cook for an additional 5-7 minutes until the sauce thickens and the eggplant is tender.
- Season the sauce with salt, black pepper, and fresh basil. Mix well and allow to simmer for another 2 minutes.
- Combine the cooked pasta with the eggplant sauce, tossing gently to coat the pasta evenly.
- Serve hot, topped with grated Parmesan cheese if desired.
