Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the cubed pumpkin to the skillet and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth, then cover and simmer for about 15 minutes, or until the pumpkin is tender.
