- Crushed tomatoes - 200 grams (canned)
- Fresh parsley - 2 tablespoons, chopped

- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add the sliced linguiça and cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the crushed tomatoes to the skillet, stirring to combine, and let simmer for 5 minutes. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
- Season the sauce with salt and black pepper to taste. Mix in the cooked penne pasta and toss everything together until well combined.
- Remove from heat and stir in the chopped parsley. Serve hot, topped with grated Parmesan cheese if desired.
