  • Crushed tomatoes - 200 grams (canned)
  • Fresh parsley - 2 tablespoons, chopped

  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced linguiça and cook until browned, about 5-7 minutes.
  3. Add the diced onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the crushed tomatoes to the skillet, stirring to combine, and let simmer for 5 minutes. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
