- Cherry tomatoes (halved) - 150 grams
- Coconut milk - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon

Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallot, sautéing until fragrant and translucent.
- Add the shrimp to the skillet and cook for about 3-4 minutes, or until they turn pink and are cooked through.
- Stir in the halved cherry tomatoes and cook for another 2 minutes until they start to soften.
- Pour in the coconut milk, and season with salt and black pepper. Let it simmer for 3-4 minutes to thicken slightly.
- Add the cooked pasta to the skillet and toss everything together until evenly combined.
- Finish with fresh parsley and lemon juice, giving it a good stir before serving.
