- Mushrooms (sliced) - 100 grams
- Red bell pepper (diced) - 50 grams
- Eggs - 2 large
- Parmesan cheese (grated) - 50 grams
- Black pepper - to taste
- Salt - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini, sliced mushrooms, and red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.
- Reduce the heat to low and add the cooked pasta to the skillet with the vegetables. Toss to combine.
- Remove the skillet from heat and quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Serve immediately, garnished with fresh parsley and additional grated Parmesan cheese if desired.
