  • Zucchini (diced) - 100 grams
  • Mushrooms (sliced) - 100 grams
  • Red bell pepper (diced) - 50 grams
  • Eggs - 2 large
  • Parmesan cheese (grated) - 50 grams
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced zucchini, sliced mushrooms, and red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

  5. Reduce the heat to low and add the cooked pasta to the skillet with the vegetables. Toss to combine.
  6. Remove the skillet from heat and quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
