  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Vegetable broth - 120 ml

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 120 ml of pasta cooking water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Pour in the vegetable broth and bring it to a gentle simmer. Add the lemon juice, lemon zest, salt, black pepper, and red pepper flakes (if using). Stir well to combine.
  4. Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce. If the pasta seems dry, gradually add reserved pasta cooking water until the desired consistency is reached.
  5. Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary and serve immediately.
