  • Ripe avocado - 1 medium (approximately 200 grams)
  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 30 grams
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, prepare the avocado sauce by combining the ripe avocado, minced garlic, fresh basil, lemon juice, olive oil, salt, and black pepper in a blender or food processor. Blend until smooth and creamy.
  3. Once the pasta is cooked, reserve a cup of the pasta water and then drain the pasta.
  4. In a large mixing bowl, combine the drained pasta with the avocado sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
  5. Fold in the halved cherry tomatoes gently into the pasta mixture.
  6. Serve the pasta warm, topped with grated Parmesan cheese if desired.
