- Vegetable broth - 200 milliliters
- Nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams (grated, optional for serving)
- Fresh parsley - a handful (chopped, for garnish)
Steps
- In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cubed pumpkin, vegetable broth, nutmeg, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the pumpkin mixture until smooth. If you don't have an immersion blender, transfer the mixture to a regular blender and blend until smooth, then return it to the saucepan.
- Add the cooked pasta to the saucepan with the pumpkin sauce. Toss well to combine, adding reserved pasta water as needed to reach desired sauce consistency.
- Serve hot, garnished with grated Parmesan cheese and chopped parsley.
