  • Garlic - 2 cloves (minced)
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 milliliters
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams (grated, optional for serving)
  • Fresh parsley - a handful (chopped, for garnish)

Steps

  1. In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the cubed pumpkin, vegetable broth, nutmeg, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the pumpkin is tender.
  5. Using an immersion blender, puree the pumpkin mixture until smooth. If you don't have an immersion blender, transfer the mixture to a regular blender and blend until smooth, then return it to the saucepan.
  6. Add the cooked pasta to the saucepan with the pumpkin sauce. Toss well to combine, adding reserved pasta water as needed to reach desired sauce consistency.
  7. Serve hot, garnished with grated Parmesan cheese and chopped parsley.
