Ingredients

  • Pork shoulder - 300 grams, ground
  • Pork fat - 100 grams, ground
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh oregano - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Natural casings - 1 meter, soaked in water

Steps

  1. In a large bowl, combine the ground pork shoulder and pork fat.
  2. Add minced garlic, chopped parsley, oregano, paprika, cumin, black pepper, salt, and red wine vinegar to the meat mixture.
  3. Mix thoroughly with your hands until all ingredients are well combined.
  4. Rinse the soaked casings under cold water and then carefully stuff them with the meat mixture using a sausage stuffer or funnel.
  5. Tie off the ends of the sausages with kitchen twine and prick the sausages with a needle to release air pockets.
  6. Refrigerate the sausages for at least 30 minutes to allow flavors to meld.
  7. Preheat your grill to medium-high heat and cook the sausages for about 15-20 minutes, turning occasionally, until they are browned and cooked through.
  8. Remove from grill and let rest for 5 minutes before serving.
