- Pork shoulder - 300 grams, ground
- Pork fat - 100 grams, ground
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh oregano - 1 tablespoon, chopped
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red wine vinegar - 1 tablespoon
- Natural casings - 1 meter, soaked in water
Steps
- In a large bowl, combine the ground pork shoulder and pork fat.
- Add minced garlic, chopped parsley, oregano, paprika, cumin, black pepper, salt, and red wine vinegar to the meat mixture.
- Mix thoroughly with your hands until all ingredients are well combined.
- Rinse the soaked casings under cold water and then carefully stuff them with the meat mixture using a sausage stuffer or funnel.
- Tie off the ends of the sausages with kitchen twine and prick the sausages with a needle to release air pockets.
- Refrigerate the sausages for at least 30 minutes to allow flavors to meld.
- Preheat your grill to medium-high heat and cook the sausages for about 15-20 minutes, turning occasionally, until they are browned and cooked through.
- Remove from grill and let rest for 5 minutes before serving.
