Ingredients

  • Pork shoulder - 400 grams
  • Pork fat - 100 grams
  • Garlic - 3 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sea salt - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Natural hog casings - 1 meter

Steps

  1. Soak the hog casings in water for at least 1 hour before use to make them pliable.
  2. In a large bowl, combine the pork shoulder and pork fat, then grind the mixture using a meat grinder or food processor until it reaches a coarse consistency.
  3. Add the minced garlic, smoked paprika, cumin, black pepper, sea salt, chopped parsley, and red chili flakes (if using) to the ground meat mixture. Mix well until all ingredients are fully incorporated.
  4. Rinse the soaked hog casings under cold water and then slide one end onto a sausage stuffer attachment. Tie a knot at the end of the casing.
  5. Carefully stuff the casings with the meat mixture, taking care not to overfill. Twist the sausages into 15 cm links and tie off the ends securely.
  6. Refrigerate the sausages for at least 30 minutes to allow the flavors to meld.
  7. Preheat a grill or skillet over medium heat. Cook the sausages for about 15-20 minutes, turning frequently until they are browned and cooked through.
  8. Let the sausages rest for a few minutes before slicing and serving with fresh vegetables or a salad.
